What's for Dinner Tonight

I am a huge fan of corn chowder...well anything corn and I saw Paula was whipping up a corn chowder with shrimp today on her show so I thought I would see what she puts into it.  Meanwhile, I saw her marinading some chicken breasts...HEAVEN!  Its no secret we eat a lot of chicken around here.  Hubs is a big fan.  I am sick of whole wheat pasta so tonight we will be having Paula's chicken:

Roasted Spicy Mayo Chicken Breasts
Ingredients


1/2 cup mayonnaise

2 lemons, zest finely grated

2 teaspoons paprika

1 teaspoon celery seeds

1 teaspoon salt, plus additional for seasoning

1 teaspoon freshly ground black pepper, plus additional for seasoning

Pinch cayenne pepper

4 (8-ounce) boneless, skinless chicken breasts

Directions

Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.

In a small bowl, whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne. Season the chicken with additional salt and pepper, to taste. Arrange the chicken on the prepared baking sheet. Slather the mayonnaise mixture over the chicken. Bake until the juices run clear when the chicken is pricked with a fork, about 20 to 25 minutes. Transfer the chicken to a serving platter and serve hot.

I will be serving this with broccoli and rice...and CANNOT WAIT!!  She says the mayo keeps the chicken extra moist.  If you bump into the hubs today, try not to mention his wife is cooking with mayonaise, please and thanks.  The marinade reminds me of Pioneer Woman's spicy fry sauce, which I LOVE!!
THIS MEAL WAS FANTASTIC AND I ALREADY WANT IT AGAIN TONIGHT!  I only used mayo, paprika, lemon pepper, seasoning salt & cayenne for the marinade.  SOOO divine!  I cooked my premium white rice in chicken stock instead of water and added some seasonings so it would taste like Tyler's favorite rice packets and we loved it!  Thinking I will do basmati rice next time since that's my favorite!!  Broccoli and black eyed peas for our veggies.  I wish I had a picture but we all scarfed this down as soon as it was done!  The chicken was beautiful with a reddish color and a subtle "cream sauce" as Tyler described.
